• Culinary Expertise at AICA

      The Academy for International Culinary Arts (AICA) Cebu recently held an open house participated by 12 cooking enthusiasts. The event showcased different cuisines prepared by two of the most notable chef instructors in AICA, Chef Nel Badere and Chef Jay Jonson.



      Chef Nel Badere, an alumna of AICA Manila and currently a chef instructor, was the Executive Sous Chef of Red Crab Group of Restaurants from 2006-2013. He was a graduate of BS Biology at Far Eastern University before he took up Culinary Arts at AICA.



      Chef Nel prepared Creamy Mushroom Pasta for the participants. Instead of using commercial pasta you see in stores, Chef Nel made fresh pasta from scratch.



      Chef Jay Jonson is the resident chef at AICA Cebu and currently Chef de Cuisine at F Café and Bar at The Gallery. He graduated BSHRM and Culinary Arts at the International School for Culinary Arts and Hotel Management in Manila. He worked as chef at Shangri-la Abu Dhabi, UAE from 2010-2012 and later came back to the Philippines and became Chef de Cuisine at the Voodoo Lounge in QC from 2013-2014.



      Chef Jay prepared two delectable Asian cuisines for the participants, namely Yang Chow Fried Rice and Pad Thai Noodles. All meals are cooked without MSG or commercial seasoning.
