Mediterranean cuisine is more than just the sunny flavors of Greek, Italian and Provençal cooking. It goes beyond olive oil, olives, oregano and basil as flavors and influence of Arabic spices come to play to add richness to the dishes.
Sunny Flavors
The adventure begins with salads and appetizers. Shaved vegetable salad w/ herbs in vinaigrette is not what you'd expect a salad to be. It makes you think of sunny spring when flowers are in bloom because that is what you will really get. The salad is garnished with bougainvillea, gumamela, and some assorted and colorful purple, yellow & orange flowers mixed with shavings of zucchini, mushrooms, raddish, carrots, asparagus, mint and arugula.
Fried baby calamari w/ fresh tomato salsa is soft & tasty and reminds you of the fresh catch coming from the Mediterranean Sea. Calamari (Italian), Calamares (Spain), Kalamar (Turkish), whatever or however it is named depending on the place and the region, it is one appetizer that is a Filipino favorite.
Arabic Flavors
Hummus, Babaganouj and Tahina are all dips or spreads served with warm Moroccan bread, a flat bread made with semolina flour.
Hummus is made from cooked mashed chickpeas (garbanzos) blended with freshly squeezed lemon juice, olive oil, garlic and seasoned with salt and pepper. This dish is the traditional cuisine of Levant which shares culinary traditions with the Turkish-Ottoman Empire.
Babaganouj, also a Levantine dish, is cooked eggplant (aubergine), mashed and mixed with olive oil, tomatoes and onions, seasoned with salt and pepper.
Tahina is roasted sesame made into paste mixed with olive oil, freshly squeezed lemon juice and seasoned with salt and pepper.

Grilled angus beef tenderloin steaks w/ arugula and roasted potatoes drizzled with aged balsamic vinegar.
