New Executive Chef
Waterfront Cebu City Hotel and Casino celebrates another proud moment as it welcomes internationally-acclaimed Chef, Simon Sperling as its new Executive Chef.
Born and raised in Germany, Chef Simon began to realize his passion for cooking at an early age. With a budding enthusiasm for the craft, he decided to pursue a career in the industry soon after finishing high school. His early years as an apprentice chef were spent in his homeland where he rightfully earned his Master Chef title. Seeking to advance his skills, he went on to join Celebrity Cruise Lines as the cruise ship's Executive Chef. Following this were his stints in international hotel & resorts in different parts of the globe including Asia and the Middle East.
With a remarkable 30 years of valuable experience in prestigious restaurants, cruise ships, and hotels & resorts, learning about people and their culture is an opportunity he deems valuable. With his vast experience, the culinary genius considers guest satisfaction as one of the greatest rewards of being a Chef. He also notes that the interaction with guests, the fulfillment of their wishes, and the ability to make people happy with simple pleasures drive him to be better at what he does.
Having worked in a various countries, the expert reveals his masterpieces are greatly influenced by his love for Mediterranean cuisine. He enjoys making dishes that are light and tasteful. One of his principles in cooking is to always keep the main ingredients be the star of the dish. As a traveler, he also gets his inspirations from the different countries he has had the pleasure of visiting. "It is like putting pieces of a puzzle together when I mix and match seasonings and ingredients from different continents"¯ he adds.
With experiences from around the world, Chef Simon is definitely an international pride. Even with his global stints, the renowned expert is no stranger to the Philippines as he spent his first 2 years in Asia working as the Executive Chef for a business hotel in Cebu. The country seems to be close to his heart quite literally too, not to mention his being married to a Filipina.
With years of notable experience in the industry, and having worked with some of the best Chefs in the world, Chef Simon's gourmet treats have definitely earned nods from some of the world's most discerning palates. When asked about his greatest accomplishment as a Chef, he says "I can't think of a single point, my career itself is my accomplishment."¯ He feels grateful for the respect he gains from people in the industry who looks to him for his inputs. But ever the family man, he says his biggest blessing is still his family and their good health.
The culinary genius has undoubtedly established a name for himself as a distinguished international Chef. But he proves his creativity extends well beyond the kitchen as he is also a promising photographer and is quickly gaining a crowd of followers for his works. Having been to 4 continents and having worked in 12 countries, he shares of his dream to see more of the world and take photos of it. He adds that his love for photography grew mainly because of his desire to share what he sees of the world. A talent of his caliber, Chef Simon is certainly accomplishing his aspiration to share his view of the humanity through food and photography.
Prior to joining Waterfront Cebu City Hotel and Casino, Chef Simon was the Executive Chef for Movenpick Hotel & Resort, Kuwait. With his extensive years of training, his dealing with people in a multi-cultural environment, and his dedication for his craft, Chef Simon Sperling is definitely a valuable addition to the Food & Beverage Division of the hotel.
New Executive Sous Chef
Waterfront Cebu City Hotel and Casino is pleased to announce the appointment of Toh Khoon Meng as its new Executive Sous Chef.
Chef Toh gained his diploma in Culinary Skills from Singapore Hotel and Tourism Education Center. He also took a short course in Singapore Ministry of Environment Food and Hygiene where he was given a Certificate of Completion in Environment Food and Hygiene Course.
Having been trained in Asian cooking the Singaporean national brings a wide variety of culinary experience to the hotel with his 23 years of valuable experience. His most recent stint was in Mount Elizabeth Luxury Hotel a parkway premium hotel in Singapore. He also had the pleasure of working for a 5 star private hospital as its Executive Chef for more than 2 years.
His experiences in the industry consist of a stretch in various notable hotel and resort restaurants in Singapore including Coco Palm Resort and Spa, Swissotel Merchant Court Singapore, Blaze Hosek Fusion Cafe, Portofino Ristorante, Le Meridian Singapore and Sunland Hotel.
His expertise includes Western, Thai, Fusion, Italian, Pastry, Mediterranean, Cantonese and Singaporean cuisine.
Chef Toh is not new to the Waterfront family as he was with Manila Pavilion Hotel & Casino in 2008 as Executive Sous Chef. Joining the Waterfront family once again, Chef Toh brings with him endless culinary possibilities to the hotel's chain of
