Marco Polo Plaza Cebu brings Independencia at Cafe Marco. This month's Culinary Journey as the Philippine Independence Day approaches. Independencia is a culinary revolution that highlights cuisines from Luzon, Visayas, and Mindanao. This buffet is running today until June 12.
Independencia features Luzon’s special kare-kare and bringhe. From the Visayas, Marco Polo Plaza’s special lechon belly, humba, and linarang. From Mindanao, the savory satti, and the Tausug dish, piyanggang. Café Marco’s signature dish, the adobo, will also be present at the buffet. The hotel’s latest offering, the Adobo Pie, will also be available at the Lobby Lounge. The pie is available in chicken and pork variants. For dessert, enjoy various Filipino desserts like pastillas, masareal, polvoron, and Maja. End the dessert with iced candy, get the leche flan flavored one. Other iced candy flavors are cheesecake and brownies.
INDEPENDENCIA 2018 is the first Café Marco “Culinary Journey”. Led by the first Filipino Executive Chef of Marco Polo Plaza Cebu, Chef Juanito Abangan. Together with his all-Filipino culinary team.
Chef Juanito Abangan began working with Marco Polo in 2007. He started as a Chef De Partie at the Pool Bar. In 2008, he was Junior Sous Chef at Blu Bar & Grill. He continued rising from the ranks until he became Filipino Executive Chef. “Through the years, I have learned the value of teamwork, passion, and continuous improvement from my past mentors,” as he emphasized the role of previous Executive Chefs and General Managers in contributing to his success and learnings. Chef Juanito believes that effective communication is important in running the kitchen. He uses his being Cebuano to his advantage in working with his team of all-Filipino chefs. Today, he oversees the hotel’s four dining venues, which are Café Marco, Blu Bar & Grill, El Viento Restaurant & Pool Bar, and the Lobby Lounge.
