What is tofu by the way?
"Tofu, also tōfu (the Japanese spelling), doufu (the Chinese Pinyin spelling), dubu (from the Korean spelling), toufu, or bean curd (the literal translation), is a food of Chinese origin, made by coagulating soy milk, and then pressing the resulting curds into blocks."

So, how do you cook tofu?
“To satisfy adult palates, think of tofu as a seasoning sponge. Whatever you mix it with, cook it with, or marinate it in, tofu is sure to take on the flavors of the other ingredients. In Asian stir-fry dishes, tofu soaks up gingery soy sauces and tames the heat of dried chilies.” Mary Chappell
The easiest, fastest way is to cut the block into slices, coat it with ready mixes (ex. Crispy mix, MCcormick chicken mixes), and fry until golden brown. You can then dip it in any sauce you prefer, be it soy sauce, ketchup, or even peanut butter mixed with worcestershire!
You may also think of tofu as meat substitute: you can cook it sweet and sour style, or use tofu instead of pork/beef when cooking spaghetti, mix with vegetables.. etc...
Or you can mix it with pork (tokwa't baboy)
How do you store tofu?
1. Take out the tofu from the plastic.
2. Place in container and submerge fully with water.
3. Refrigerate. DO NOT freeze.
4. Change the water frequently (best if daily)
5. Shelf life: (if submerged in water) up to 10-12 days
Some recipes:
Tokwa Barbecue Style
7 tokwa squares, cut in half and fried
¼ cup margarine
1 tsp pounded garlic
1 med onion, chopped
1 cup tomato sauce
¼ cup lemon lime or 7-up drink
¼ cup pineapple juice
1 tsp salt
1 tsp vetsin
¼ cup water
1 Tbsp cornstarch
2 tsps sugar
Melt margarine, add the onions, and the rest of the ingredients except the tokwa and cornstarch. Let boil. Thicken with the dissolved cornstarch. Add the fried tokwa and cover. Let simmer over low fire until half of the liquid is absorbed.
Cubed Tofu
Cut tofu in 1 inch cubes. Soak in a mixture of soy sauce, lime juice, garlic, vetsin and salt for an hour. Dip in egg and bread crumbs, then back in egg again, and fry in hot oil.
