• Culinary Journeys: Independencia “A Tribute to Filipino Heroes”


      This year marks the 117th year of the Declaration of Independence of the Philippines from Spanish colonial rule.

      The launching of this month's Culinary Journeys: Independencia “A Tribute to Filipino Heroes" was highlighted with a trivia contest which brought back details such as the Treaty of Paris of 1898, Who wrote the lyrics of the Philippine National Anthem?, Dr. Jose Rizal's first love, the full name of Dr. Jose Rizal, Who created the Spoliarium?, to mention a few of the questions that were asked.


      Join the celebration of Philippine Independence though Café Marco’s Culinary Journeys: Independencia “A Tribute to Filipino Heroes”, as it features the favourite dishes of Dr. Jose P. Rizal, Andres Bonifacio, Gregorio H. del Pilar and Marcelo H. del Pilar.

      According to Ms. Jessica Avila "food is prepared on an eat and run basis." A thorough research was done to find out what our heroes ate and what their favorites were to come up with this month's dishes.


      Kakanin

      Tinolang manok with sili leaves is a favorite of Dr. jose rizal. Desserts or Kakanin is what Gregorio H. del Pilar enjoys the most. Andres bonifacio loves lechon manok which he wraps with a banana bark to share with his comrades. Marcelo H. del Pilar delights his tastebuds with pocherong manok.


      Tinapa (smoked fish), Achara (Pickled Papaya), Kinilaw (Ceviche), Boiled Camote (Sweet Potato) with ginamos (Salted Fish)

      Must try dishes: for the appetizers, tinapa (smoked fish), boiled banana and camote (sweet potato) with ginamos (salted fish); for the mains, tinolang manok, kare-kare, batong (string beans) with pork. There will be a total of 15 dishes that will be served on rotation for the duration of the Culinary Journey.

      The “Culinary Journeys” aims to share a feast of culinary experience that forms part of Philippine History. It is a tribute to the valuable contribution of Filipino heroes in the quest for Philippine Independence.

      Café Marco’s Culinary Journeys: Independencia “A Tribute to Filipino Heroes” runs for ten days, from June 11 to 20, 2015, for lunch or dinner which will be served on top of the international buffet stretch.
