AFAIK, 6950 to 6970 has 3 mods.. shader unlock only, shader + clockspeed , shader + volts + clock speed.

All 3 will make the card run hotter since more shaders/clockspeed/volts are added.

Consider the cooler thats mounted on the card and its operating temps at default setting before you unlock that. You might get the thing to overheat a lot or worse fry the chip.

80 seems pretty normal for GPU's these days. Im hitting 90c im not even worried the slightest but I would be getting a new cooler if something comes up.

Is there such thing as a proportionality in shaders, bandwidth, clockspeed, vram speed in order to maintain stability? Let's say that your gpu has 1600 shaders yet the bandwidth is only 4.8GB/s? Will negative issues occur?

With overclocking not all cards are the same, some cards may like a certain sweet spot for a combination of core/shader/mem to operate even better. For nvidia core/shader ratio is locked with the fermi gpu's to maintain best performance even when overclocking.
