In auto mode.. you'll set the exposure to +2 or -2 to get the desired aperture and shutter speed..
in manual mode.. you'll set the aperture and shutter speed so you will get the exposure you wanted..
in other words, the exposure is just there to guide you kng ang setting mo sa shutter and aperture has the correct exposure or under or over exposed..
is there a way.? yes..
be mindful of the settings before you take the shot..
before taking the shot place it on the exposure that you wanted..

You can't do exposure lock in manual mode.
Can you please give us more info? If naa ka indoor, bisan onsaon nimo ug adjust sa shutter and aperture, mo -2 gihapon? And sa outdoor mo +2 gihapon?
I need to ask these ha to get to know how far you've played with your camera. Do you know what shutter, aperture and iso and metering mode do to your exposure? If you know how those first 3 things work, I don't think you'll have a problem getting the proper exposure in manual mode. Proper exposure meaning that bar thing is at the middle not - and not + something. Note: Having that bar thingy in the middle does not necessarily give you creative exposure.
Hi 450d user here.... i suggest practice more on TV mode and AV mode... master those two modes and chicken nalang kaayo na ang Manual mode...see how you can darken or lighten your shots using those modes.. so play how the exposure will affect your shot and see how the ISO will affect your shot and see how a flash can help your shot...hahahaha daghan kaayo see oi...

Learn the Zone System. Don't rely on the camera's exposure as all cameras see in gray.
Find a white and black paper. Put your camera in AV mode. Fill the frame with the white paper (as in puti ra imo makita). Shoot, gawas gray. Do the same with black paper. Gawas gray gihapon.
This should get you started. If shooting white with details (snow, white t-shirt), the exposure indicator should be under +2. If shooting black with details (charcoal, black hair), then the exposure indicator should be under -2. If shooting a morena or moreno (Cesar Montano), then indicator is at 0.

You're welcome. Here's a slide from my Photography in 2 Hours presentation (which I haven't taught anyone in person yet).
Zone 3 = -2
Zone 4 = -1
Zone 5 = 0
Zone 6 = +1
Zone 7 = +2
Of course not all subjects fall exactly at any Zone System. Dark skinned Africans are at -1.5. Light skinned Asians are at 0.5 not 1 (mas puti gihapon mga Caucasians).
Since you have a Canon, your exposure indicator looks like the one below. It also shows you the equivalent zone system.
If you learn to meter properly, you don't have to PP your photos in terms of brightness and color.
I used to PP a lot before I learned the Zone System. As of now, I just heavily PP for artsy stuff.
