Cooked Broccoli Salad (Healthier Alternative to Potato Salad)
Ingredients
- 2 cups cooked broccoli (coarsely chopped)
- 1 cup sweetcorn
- 1 hard-boiled egg (chopped)
- 1 large red onion (finely chopped)
- 1 garlic clove (finely chopped)
- 2 tablespoons flat leaf parsley (finely chopped)
- 3 tablespoons sour cream
- 1/2 cup light mayonnaise
- 1/2 teaspoon salt
- 1 teaspoon fresh ground black pepper
Directions
- in a large bowl mix the salt, pepper, garlic, sour cream and mayonnaise then add the remaining ingredients , stir well and refrigerate for at least 1h before serving.
Land and Sea Salad - Nectarine & Crab Salad With Dressing
Ingredients
Salad Dressing
- 1/4 cup sour cream
- 2 tablespoons catsup
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon prepared horseradish
Salad
- 1 1/2 cups chopped lettuce
- 2 fresh nectarines or pears, small chunks
- 7 1/2 ounces canned crabmeat, drained and flaked
- 2 hard-boiled eggs, sliced
- 1 avocado, sliced
- 2 tablespoons green onions, chopped
- 3/4 cup seasoned croutons
Directions
- Blend first 4 ingredients in a small bowl, cover and chill for 30 minutes.
- In a large salad bowl: mix lettuce thru green onions. Toss gently with chilled dressing.
- Cover and chill dressed salad for 2 hours.
- Top salad with croutons after plating.
Buko Salad (Filipino Young Coconut & Fruit Salad)
Ingredients
- 3 cups coconut meat, grated (or you can buy it canned)
- 1 (15 1/2 ounce) can fruit cocktail, drained (don't use the juice from the can)
- 1 (10 1/2 ounce) can Nestle cream
- 1 (10 ounce) can sweetened condensed milk
- 1 cup whole kernel corn (optional)
- 1/2 cup cheddar cheese, grated (optional)
Directions
- Combine and toss together all ingredients.
- Freeze in the freezer.
- Take it out and enjoy the cold desert.
