Halo, you can go try going to Veggie Mart, its the store right beside Handuraw Pizza in Gorordo Avenue, Lahug. (In front of Sr.Pedro & Gasul outlet).

They have sausages there, but I'm not sure about the tofu sausage exactly, maybe its gluten or soy based. They do carry quite a number of vegetarian foods that are tofu and gluten based. Lots of choices there, plus different shapes and flavors. The owner & his family are strict vegans. I have a product list somewhere but I can't find it right now.
