8x is more than enough for SLI, im not aware of any mobo that offers 16x + 16x. no performance gained anyway.
EDIT: just maybe the nForce 7xx series provides 16x+16x

Based on the Intel side 8x/8x is not officially supported by a chipset only 16x/4x is officially supported by the P35 and P965.
8x/8x is only available in very highend P35, P965 or P975 boards. Bacause the motherboard itself has a special chip that does this.
In the P35 and P965 chpsets the 8x/8x is a feature termed by Asus as crosslinx to fix the 16x/4x bottleneck.
The main disadvantage in getting 8x/8x is its only available on very highend motherboards which in this case very expensive. Just to have a special feature to eliminate 16x/4x bottleneck. I think the Asus P35 maximus series has this 8x/8x feature.
So comes the x38 and x48 chipsets which can operate at 16x/16x which
is at par or cheaper in price compared to the special P35 8x/8x motherboards. So why buy the more expensive 8x/8x motherboards?
And also If your considering multi GPU or videocard Crossfire always scales better than SLI and has more performance gains compared to SLI.
In Nvidias end however.
1 factor "could be" that SLI scales not as good as crossfire is because SLI is just limited to 8x/8x. Hmmmm....
also ATI has superior driver improvements.
Also As I have checked toms hardware reviews 16x was better performance in HighResolution and when increasing the details.
