you should now the difference the current sb and the latest xeon. The two doesn't come even close in price tag what more in performance.

Assumed its an i7 based architecture the performance is 1:1, Xeon only has 2 advantages 1.) working secondary QPI channel/lane to communicate with another processor on a MP setup, 2.) Xeons are believe to be better binned chips but a lot of retail every chips can put a xeon to shame in terms of overclocking.

performance is more or less the same. xeon shines on multi socket configurations that can only be found on HIGH END Workstation PC

The most important thing in building a rig for video editing is to use a hardware accelerated MPEG-2 rendering such as the DV500 from Pinnacle. The most demanding part of video editing are both during video capture and video rendering.
