It's just unfortunate that my tests don't include motion graphics, I would have loved to share info with you but since my knowledge is very limited I will refrain from doing so as I might not be of help. Anyway, I assume you are using After Effects, if you can cross platform, Motion would be another tool.

Another suggestion on how to do things is to check the location at the same time as your expected shooting time so you have an idea how light behaves in the area at that time and give you a feel of traffic (visual and aural) volume.
When checking for audio, a mere clap will give you a hint if reverberation will be a problem.
And in dealing with hostility in malls, a dyed hair helps.
Seriously, if you really need to shoot in a mall then start practicing shooting at a different angle from where your facing. Example, point your camera towards your right side while in crossed arm position and glancing only at the LCD from time to time. This disguised relaxed position often helps rid of suspicion guards and who ever your shooting won't be conscious. I know you can find better ways so please share.
