The very best HEALTHY ALTERNATIVE ITEMS for beakfast are FRUITS . Nothing beats it and be just creative about it aron di boring pod like sliced strawberries on top of crepes , pancakes or french toast . You can add fruits to cereals too or just eat them plain .

    Cornmeal Pancake
    (from Mr. Breakfast)
    Category: Cooking/Frying
    Style: Southern American
    Servings: 4 servings

    Ingredients:
    1 and 1/4 cups flour
    1 and 1/4 cups milk
    3/4 cup cornmeal
    2 eggs - beaten
    3 Tablespoons vegetable oil
    1 Tablespoon baking powder
    2 teaspoons sugar
    1 teaspoon salt
    1/2 teaspoon vanilla extract (optional)

    Directions:
In a medium bowl, sift together flour, sugar, salt and baking powder. Stir in the cornmeal.

In a separate bowl, whisk together eggs, milk, vegetable oil and vanilla (if desired).

Add liquid mixture to dry mixture.

Drop by heaping tablespoons on a greased hot skillet or griddle. Cook until edges are brown and bubbles are in the middle. Turn and cook on other side. Serve with butter and maple, sorghum, molasses or other syrup (my kids used honey).

This is a pancake with substance. The cornmeal provides a great flavor and a hearty texture. - from my food blog.
