I have only tried 3 korean restaurants (Seoul in Cebu, Hangukan, and Korean Noodle House) so I can't really give a sure recommendation on the best kimchi in town. The bottled kimchi in supermarkets are not as good as those in restarurants though (aslom kaayu uy). But the packed kimchi in Assi Mart is good! I frequented the place when I was still living in Mabolo.

    No need to be sorry....

Ingredients are basically the vegetable (cabbage or raddish usually), red pepper paste, garlic, and ginger. It's a side dish and most koreans eat it in every meal. I guess our counterpart is the "bulad" or "ginamos".

@Gwynhuever: Are you referring to Kanyoen? I think it's a Japanese resto and not korean. Japanese Resto nga Yakiniku Style (grill)
