no secret. it's in the spices, type of pig, age of pig, preparation, and how it's cooked.
lahi ang atong lamas kaysa other countries i.e. US. Ang gigamit nato bisaya nga ahos ug bombay plus our local rock salt, patis, sibuyas dahon ug tanglad pud. sa US wala na cla anang bisaya nga ahos ug bombay.
nya we are using traditional way of roasting using bamboo pole and charcoal from our local wood.
i have a friend in the U.S. who even complained that chicken ra unta kno kau mag luto ug humba dre sa Pinas pero pag abot niya sa US, wala gyud cya kakuha. the difference lies in the pork and spices.
nya if we compare Cebu lechon w/ Manila lechon, naa pud diperensya.
depende asa nga parte sa lechon. mas taas ug calories ang fatty part like sa skin, tiyan, back, head, ug jowl. the most lean part is the loin chops. If I'm not mistaken, that is about as lean and healthy as white meat chicken breast.
on the average, i think it is 100 calories per gram of lechon. but then again, who eats only 1 gram of lechon? LOLs
