I'm too am puzzled why the church design a "all-seeing-eye" on the church if its a catholic church.. Since a Catholic Church symbol is usually the "cross" or a figure of jesus or a saint.
And in the Cao Dai religion, the "all-seeing-eye" is there common symbol for there temple/church. Its like a "cross" for the Cao Dai temple/church

Three Teachings within Caodaiism are: Buddha, Sage & Saints
The Three Teachings represent hierarchical levels of spiritual attainment, with buddha as the highest. Caodaiism's various stages of spiritual development from human on up are: Thần (angel), Thánh (saint), Tiên (sage), and Phật (buddha). Angels, saints and sages may have, accordingly, extremely long lives in the realms of heaven, but only buddhas are free from the cycle of birth and death.

(I think CaoDaism is a great religion since it is a combination of Christianity, Buddhism, Taoism, Confucianism, Hinduism, Islam, Judaism and other religion. Please post here if you have more words of wisdom on this Religion)

    Cao Dai Symbol:
I think the church uses so many ancient symbols since the time of Constantine. There are ESOTERIC symbols in the church but were not explained to the public. Only the priests and theologians know about this.

As for the seeing EYE it symbolizes GOD the Father who is Omnipotent, Omniscient and Omnipresent! GOD is the center like the SUN in the Universe and the rays are US! Man is part and parcel of GOD...therefore MAN is ONE with GOD! The triangle symbolizes THE HOLY TRINITY which is a universal symbol of all religions!
