    Default Italian Cuisine, Anyone?


    hello...lately i have been making italian dishes...most mga recipe sa akong mother-in-law (my husband's grandparents are from naples,italy) ang uban sad from italian cookbooks...

    nahan ko mga antipasti...and now i am learning some pizza sad...let us share sa atong mga italian recipes here excluding pasta lang kay there is a specific thread for that already...

    for dinner i made penne rigate with red sauce ...and ang antipasti namo was stuffed roasted pepper...my husband said it was good so share lang ko ...kay sayon ra man kaayo...

    first slice the red pepper in half (lengthwise)....drizzle with olive oil and crushed garlic...season with salt and pepper..then bake at 350F approx 40 minutes...after that igawas sa oven...butangan slices of scallops sa tunga...a little pesto sauce then balik sa oven for additional 10 minutes...top with parmesan cheese and garnish with fresh basil leaves....mas nindot ni if served with good bread kay ang drippings (garlicky oil) lami ayo tusloban ug pan oi

    I love italian, especially recipes you dont usually find in restos. I'll try to come up with some Latter recipe sounds interesting and quick.

    hello ke and joan....sige visit the thread and share your recipes and experiences...

    @KE ...pizza escarole is my husband's favorite...wala lang escarole sa cebu...so inig uli nako puhon mag dala ko seeds...hopefully mabuhi!

    maybe i can post the recipe next time and you can tell me what can be used as alternate for escarole....

    tonight i will make eggplant,lemon and caper salad (caponata in italian)...post nya nako ang result if lami ba he he he

    @love2travel...here is the recipe for Stuffed Roast Peppers with Pesto (Peperoni Arrostiti Con Pesto) - serves 4

    4 squat red bell peppers
    2 large garlic cloves cut into thin slivers
    4 tbsp olive oil
    4 shelled scallops
    3 tbsp pesto
    salt and freshly ground pepper
    parmesan cheese
    salad leaves and basil to garnish

    1- Pre heat the oven to 350F. Cut the peppers in half lengthwise through the stalks. Scrape out and discard the cores and seeds. Wash and pat dry.
    2- Put the peppers cut side up n an oiled roasting pan. Divide the slivers of garlic equally. Sprinkle with salt and pepper. Spoon the oil into the peppers, then roast for 40 minutes.
    3- Cut the scallops (flat). Remove peppers from oven, put scallops (divide equally) and top with pesto.
    4- Roast for 10 more minutes. Transfer to individual serving plates, sprinkle with parmesan cheese and garnish with salad leaves and basil. Serve warm.

    Nice pa jud with bread for the garlicky drippings...enjoy!
