performance between 2 sticks of ram vs a single stick, i would choose 2 sticks, however you can only notice it if you work on memory intense application like database apps, games etc.

does it really matter? - yes! dual channel mode proves to be beneficial in most cases than single channel.

think of it this way:
you have 2 roads with 10 cars each. 1 road has 2 lanes, while the other has only 1. which road would allow faster travel, the single lane or double lane?
