Spaghetti with Clams in white sauce
Ingredients for 4 persons
400 grams spaghetti
1 kilo fresh clams
2 cloves garlic thinly chopped
Parsley thinly chopped
Salt
Olive oil if possible extra virgin
Dried chilli pepper or ground pepper
PREPARATIONS:
Wash clams and put in a big bowl, add abbundant water and 1 tbsp salt, set aside for 1 hour. This will let clams expel sand inside the shell. Wash them again thoroughly.
Put 2 tbsp olive oil in a pan, sauté thinly chopped garlic and 2 tsp parsley until slightly brown, add clams, stir and cover the pan, leave them be cooked for 20 minutes. Add a very small portion of chilli pepper or just sprinkle some pepper powder on top. There’s no need to add salt since clams are salty, then add ¼ cup olive oil and set aside.
In a pot boil 3 litres of water and add 1 ½ tbsp of salt, add spaghetti and proceed cooking. Drain when they are half cooked. In the sauce pan with clams add 1 to 2 cups of that water used for cooking the pasta. Put half cooked spaghetti in the sauce pan with clams and continue cooking until a bit tender, spaghetti should be left “al dente” tender but firm. Serve hot, do not sprinkle cheese on top.
**** spaghetti with clams ( in red sauce) can also be prepared by adding 200 grams tomato sauce (if possible peeled and cut into pieces in it’s natural sauce) when cooking clams . Mussels can be used too or other kinds of shells instead of clams****

Spaghetti with crab sauce
Ingredients for 4 persons:
400 grams spaghetti
4 pcs crabs
200 grams tomato sauce
2 cloves garlic
1 onion
Parsley
Salt
Olive oil-extra virgin is best (olive oil works too)
Dried chilli pepper or ground pepper
Knorr cube
3 tbsp white wine or sprite
Preparations:
Wash crabs and cut each crab in 2 pieces, be sure not to lose that dark green sauce or the water inside, that adds flavour to the sauce. In a pan sauté chopped garlic and onion in 2 tbsp olive oil until light brown, add crabs, 3 tbsp white wine or sprite, tomato sauce, 2 cups water and cook for 20 to 25 minutes . If you prefer a bit spicy add a small portion of dried red pepper or just sprinkle some pepper powder, then add 2 tsp chopped parsley and season with 1 knorr cubes, then add ¼ cup olive oil and keep warm. Cook spaghetti until tender but firm, drain and mix them to the warm sauce. Serve hot, and do not sprinkle cheese on top.
*** aside from crabs, lobsters prawns and shrimps can be used too***

Tagliatelle / Fettucine with Mushrooms
Ingredients for 4 persons:
400 grams tagliatelle or fettucine
200 grams dried mushrooms or ½ kilo fresh mushrooms (if not available those in can could be a substitute)
2 cloves garlic
Parsley
Knorr cube (or other brands)
Olive oil extra virgin
salt
Preparations:
Soak dried mushrooms in cold water for 1 hour and wash them, if they’re fresh cut in small pieces and wash thoroughly, if they’re in can just drain water or oil inside. In a pan sauté garlic in 2 tbsp olive until light brown, add washed mushrooms, 2 cups water, cook for 30 minutes or until mushrooms are tender, ( if necessary add some water), season with 1 knorr cube, add ¼ cup olive oil and 2 tsp parsley. Keep warm.
In a pot boil 3 litres water, add salt and cook the pasta ( 7 minutes for tagliatelle and 5 minutes for fettucine), drain and mix to the warm sauce. Serve hot and dust with parmesan cheese.
Penne or Tortiglioni with vegetables
Ingredients for 4 persons:
10 pcs string beans (batong, don’t know if string beans is correct name)
2 carrot
3 eggplants medium size
2 cloves garlic
1 onion
200 grams tomato sauce
Oregano
Olive oil-extra virgin
Knorr cubes
Salt
Preparations:
Cut vegetables in small pieces, in a pan sauté garlic and chopped onions until light brown, add string beans, carrots, and 3 cups water, after 5 minutes add eggplants, tomato sauce and knorr cube, cook until tender, add oregano leaf or 1 tsp oregano powder and ¼ cup olive oil, keep warm.
Cook penne in salted water for 11 to 12 minutes, mix to vegetables and serve hot, dust with parmesan cheese.
*cooking idea - if you have extra chopped parsley, put it in a plastic container in freezer, you can use them whenever necessary*
