..@gwaps specifically requested for carbonara....i do have the recipe pero i have not tried this yet....di man kaayo ko partial for carbonara gud...but here goes:
Spaghetti alla Carbonara
1 tbsp extra virgin olive oil
6 oz pancetta or bacon , finely diced
4 large eggs , beaten
1/3 cup pecorino cheese
ground black pepper
Heat in a large skillet over medium heat the olive oil. Add the bacon and cook until crisp. Pour off all but 3 tablespoons of fat.
When spaghetti is cooked al dente, reserve 1/3 cup of the pasta cooking water and combine it with the lightly beaten eggs and pecorino cheese.
Drain pasta and add it while very hot to the skillet. Add the egg mixture and toss over medium heat until eggs are firm. Season with ground black pepper to taste.
Serve hot with additional pecorino cheese.
