"We walked to Larsian Fuente where our research told us we would find the latest food craze, balamban liempo, “better than lechon.” If no less than international chef Anthony Bourdain says that the best pork in the world can be found in the Philippines, who are we to argue? No one would tell us what secret spices went into the pork belly but it’s so memorable, I am still craving it days after. You can have puso or hanging rice to complement your pork. Never mind the cholesterol overload. That’s living dangerously."
