Most of the symphonic bands I listen (or heard of) are either power metal and/or gothic, well except for bal-sagoth, since they're symphonic black metal. Arthemesia belongs to the symphonic black metal group too, but I rarely listen to their album, I only like a few songs. As for Therion, well I don't have their latest album yet, so that can wait. For battle-esque music, ala Lord of the Rings, I listen to viking metal, since they have synths too, but their music usually speaks of great battles, iron and blood mixed in the earth, and stuff like that. Well, I guess symphonic metal is just easier to the ears and usually attracts the mainstream audience.
