Anyone who's a fan of Samurai Champloo should check out Cowboy Bebop! I liked the way director Shinichiro Watanabe (he's had a hand in Macross and Animatrix), fused blues/jazz with Bebop and now hip-hop with Champloo. Oh, and the action sequences aren't too shabby either.

Others I can think of:
Paranoia Agent = for the existentialist in you
Inuyasha = feudal era mysticism
Case Closed = a guilty pleasure in my part
Rurouni Kenshin = it gets interesting with Shishio around

US-borne animation that I just felt like throwing in:
Family Guy = bizarre, sometimes disturbing humor
Futurama = snoo snoo anyone?
Harvey Birdman: Attorney at Law = what ADD might be like if one were to sum it up in a series
Avatar: The Last Airbender = ok so its a Nickelodeon cartoon, I can regress sometimes!
Invader Zim = beware puny earth slugs!!!
