ok first of all.mahal kaayo ang wood chips apple, maple etc tag 250 man cguro ang bag and available ra sa mga hardware sa malls. ace, true value etc.
second, most pinoy homes dont own a grill with a lid. not to mention a smoker.
the dry rub is easy and broiling it in the oven is pretty standard.
the good thing about this recipe is its an authentic way on making ribs. but is very time consuming and a bit expensive.
there is a shortcut for this and mostly the shortcut way is what most restaurant in cebu do.since its much quicker and cheaper.
what i do is par boil the ribs in highly seasoned stock until tender.
make the sauce
coat the ribs in sauce and grill.
instead of using real wood chips you can use liquid smoke in the sauce to simulate the smoke flavor. i bought a bottle of liquid smoke before at metro ayala.
one thing thou you can't imitate that smoked ring by doing this. but it is pretty close to the real thing "smoked baby back ribs".
