yes, i used these books before when i was practicing culinary arts and i think some top culinary schools are also using these books as references since i was enrolled in a international culinary school. practical cookery is the book used in some hotels where i've worked before. items are still negotiable anyway. where do you plan to enroll at MIXEDSTUFF@?

PSCA or AICA. Do you have any recommended school here in Cebu?

both schools you've mentioned are excellent culinary schools at their own forte of training a world class chef. I was enrolled in ICAAC before. no matter where you're enrolled at as long as you have the passion and the guts of becoming a good chef then its possible to achieve that dream of becoming one. while you check out the 3 schools you can always compare which is best because i know they'll let you witness their facility and check out their training competencies which they offer but in the end it all depends on you. good luck MIXEDSTUFF@.
