I think a lot of it goes to the fact that not only does intel solve the supply issues, intel also has name recognition when it comes to the consumer market. Most people who have never touched a computer have heard of a pentium processor and if they have heard of pentium then they have heard of intel and when you have an ad that shows intel inside it will open a huge new market for apple based systems.
Intel has two unattractive choices: Kill Itanium and risk its partners' wrath, or split its marketing and R&D budgets between Xeon and Itanium. Either way, AMD ends up with a strategic advantage -- and Intel with a silicon albatross.
In addition, switching to Intel gives Apple two sources of compatible CPUs: Intel and AMD. (Just had a thot: once the transition to Intel CPUs is complete, Apple buys AMD to further lower its costs.)
