    Default Chicken Sinigang

    Very important when cooking sinigang, the right saltiness and right sourness

    Ingredients:

    1 stewing chicken (1 kilo) is okay
    1 onion, diced
    2 tomatoes, diced
    1 head garlic, minced
    2-3 pieces of taro, peeled and cut into 2x2-inch cubes
    1 bunch of kangkong (leaves and upper stalks only)
    1 bunch kamote tops (leaves only)
    2 eggplants, sliced
    1 green chili pepper
    2-3 tsps. "sinigang" mix (tamarind for meat, guava for fish and shrimp) -- too much sinigang mix may make the soup too sour, I use at least 2-3 tsps.. when you cook, adjust lang kung kulang ang sourness.
    1 tbsp. cooking oil
    salt or patis to taste (i use salt)

    How to:
    1. Chop the chicken into serving pieces, setting the breast aside.
    2. Heat the cooking oil in a big saucepan or casserole. Saute garlic. Add onions, chili pepper, and tomatoes.
    3. Add chicken pieces.
    4. Stir until the chicken turns opaque.
    5. Add water (probably 2-3 cups, igo-igoa lang ang sabaw, myself ganahan ko daghan sabaw) and add salt (1/2 tsp)
    6. Bring to a boil. Lower the heat, cover tightly and simmer slowly for 1 1/2 to 2 hours.
    7. When the chicken is tender, turn up the heat to medium-high and add the taro pieces.
    8. When the mixture boils again, reduce the heat to low and simmer for about 7 minutes.
    9. Add eggplant slices. Simmer for another 5 minutes or until the eggplant is almost done.
    10. Add kangkong and talbos ng kamote.
    11. Stir in the sinigang mix and adjust taste (add salt)
    12. Simmer for another minute.

    Then serve. Yummy. Lami mag sinigang ug manok bisaya.

    Here is another recipe with Oyster Mushrooms....

    Stir-Fried Oyster Mushrooms
    Serves 3 to 4 as a side dish

    Oyster mushrooms are incorporated in many Asian dishes. They cook quickly, and are therefore naturals for stir-fries.

    2 tablespoons peanut oil
    1/2 tablespoon Asian sesame oil (see page xx)
    One 1/8-inch-thick slice fresh ginger, peeled and minced
    3 garlic cloves, minced
    1/2 pound oyster mushrooms, sliced or torn in even pieces
    1 cup fresh or thawed frozen peas
    2 tablespoons chicken broth
    Pinch of sugar
    2 Chinese-style ( firm ) tofu cakes, cut into cubes
    2 tablespoons soy sauce or more

    Using a wok or skillet, heat the peanut and sesame oils together until bubbling. Add the ginger, garlic, mushrooms, peas, and sugar and quickly stir-fry for 2 to 3 minutes. Add the broth. Cover and simmer for 3 to 5 minutes. Add the tofu and soy sauce. Cook uncovered for 3 minutes. Serve immediately over rice.

    here is a sylvanna recipe i dug up from one of my cookbooks

    wafer
    1 cup eggwhites
    1 cup sugar
    1 cup chopped cashew nuts
    1/2 teaspoon vanilla
    1 cup toasted all-purpose flour
    1 cup wafer crumbs

    buttercream
    1 cup sugar
    1/3 cup water
    6 eggyolks
    1 cup butter

    preheat oven to 350°F. heavily grease and flour the backs of 2 jelly roll pans. set aside.

    - beat eggwhites until soft peak stage (basing on experience, using a moulinex mixer, this is around 2 minutes of mixing on high speed).
    - add sugar gradually and continue beating until stiff
    - fold in chopped nuts and vanilla.
    - spread mixture thinly on prepared pans.
    - bake for 30minutes or until brown.
    - when done, scrape the wafer lightly with a spatula to remove from pan.
    - cut the wafer using an oval shaped cutter. set aside.
    - pound the wafer trimmings until fine then combine with toasted flour.

    prepare buttercream
    - boil the sugar and water together until thread-like. Bring to a boil, and heat to 270 to 290°F (132 to 143° C), a candy thermometer would be a very useful tool for this, or until a small amount of syrup dropped into cold water forms hard but pliable threads.
    - in a bowl, beat the eggyolks until light in color.
    - pour in the syrup to the beaten eggyolks and continue beating until thick (Add the hot syrup in a thin stream to the beaten egg yolks, while beating at high speed.) cool
    - in a separate bowl, cream butter until soft (around 10 minutes)
    - gradually mix in cooled eggyolk mixutre and beat until of spreading consistency. ( Beat in the whipped butter until smooth.)

    to assemble
    - get a wafer and spread with some buttercream.
    - sandwich it with another wafer.
    - cover the entire thing with buttercream then roll in a mixture of toasted flour and wafer crumbs.
    - chill before serving.

    cheese sticks - the easy way

    1 pack lumpia wrapper (the square ones)
    1 box of cheese (eden or your desired cheese)

    slice the cheese (the size of your finger)
    wrap the cheese with lumpia wrapper

    deep fry, drain and serve with thousand island dressing or mayonnaise
    enjoy!

    homemade cheese sticks ala DH (don Henrico's)

    mozarella cheese
    bread crumbs season with italian pizza seasoning
    italian pizza seasoning
    1 egg beaten season with the italian pizza seasoning and salt and pepper
    dough ( i used chapati or pita pockets)

    half the pita pockets, fill with cheese. close the pocket. dip the pocket in the egg wash, coat with the bread crumbs. deep fry. serve and enjoy

    if using chapati: half the chapati, wrap the cheese with the chapati, the same way you wrap a lumpia. dip in the egg wash, coat with the bread crumbs. deep fry. serve and enjoy.

    serve with salsa
