Hunt for the Red Velvet - this muffin is not too sweet and it has a moist texture as you bite into it. I can't say it's the best red velvet I've tasted but I rate it 3 spoons out of five. This muffin is sold at 49php/piece at S&R Food Court.

Foodtrippin ala C'thulhu...
Just arrived from an out of town trip and needed a quick fix so threw together some ingredients to make this rice pilaf, all in one dinner already...

Last night as I do not have much time to prepare, I made rice pilaf. Basically it is just rice withe some re-hydrated dried shitake mushrooms, dried scallops, xo sauce, smoked sausage, shrimps, garam masala, curry powder, fish sauce, garlic and some parsley flakes for garnish... You may add or subtract ingredients as you wish. I like basmati rice, its got a low glycemic index which is good for me.
Procedure is very simple, after preparing all ingredients, just chock it all in your rice cooker and cook away.
My usual ratio for a cup or a cup and a half of uncooked rice:
1 piece dried mushroom
1 piece dried scallop
8-10 pieces small shrimps
1 link smoked sausage
1 tsp xo sauce
1/4 tsp garam masala
1/4 tsp curry powder
few drops fish sauce
2 cloves chopped garlic
a dash of chopped parsley
For the chicken curry, I used whatever chicken was left(combination of breast and legs), garam masala, curry powder, black and green cardamon, black peppercorns, star anise, salt, fish sauce, garlic and parsley flakes.
Procedure and ratios of ingredients:
900-1000g chicken
3 tbsp curry powder
1 tsp garam masala, more if you want it hotter
3 cloves garlic
3-5 pcs black and green cardamons
1/2 tsp black peppercorns
1 star anise
1 tbsp fish sauce
salt to taste
dash of parsley flakes for garnish
First heat your pot/pan then put in cooking oil/ghee/butter(your choice) about 5-7 tbsp, put in the spices, when fragrant, add the spice powder, mix well, then add the hard to cook pieces of meat first after which the more tender parts. mix well, let brown for a while, add the fish sauce, then add some water. You may add a bit more curry powder if you wish, let simmer until meat is tender, salt to taste then sprinkle the parsley flakes, lat stand for a while then serve over rice.
The sausage rice is just rice with a link of sliced smoked sausage tossed in the cooker to add flavor.
There are no absolutes when I cook, I just make stuff up as I go along, depending on whatever I have on hand, I make use. You may do so as well, too lazy to write stuff down...
