If you're the traditional RPG gamer (I mean coming from Dungeons &Dragons stuff) I would highly suggest going for the Neverwinter Nights games. They still follow the same basic rule sets used on AD&D.

If you're looking for a new twist on RPG gaming try the Fallout series (Fallout 1 & 2, plus Fallout Tactics). They took the D&D RPG ideas and changed the whole scenario to a post apocalyptic world.

If you're a Star Wars fan, you could play the Knights Of The Old Republic 1 & 2. The story and gameplay is quite good and if you're really a fan I would say it would exceed your expectations.

And if you're looking for a good 1st-person type RPGs I could suggest the Deus Ex games and the Vampire: The Masquerade games. They both offer an immersive feel for the players and not just hacking and slashing.
