Well, in the opening scenes of the The Fellowship of the Ring, the discovery of the ring by Bilbo was already shown, hence explained.
As to why it was made after the Lord of the Rings film trilogy, simple: the book trilogy is cleary more popular and superior to the The Hobbit. I honestly don't think we would appreciate the The Hobbit more if it had been made first. (I'm glad del Toro left, and Jackson came back to direct it.)
By the way, I'm quite surprised at the size difference between Thorin and the rest of the dwarves. I seem to recall the book describing him as larger than the rest, but he looks as big as Gandalf in the trailer. Your thoughts?
