Caviar by definition is fish eggs from sturgeons and only sturgeons. Other fish eggs from other fishes are not caviars (they're caviar substitutes). Caviar substitutes are the ones they use on most sushi. Caviar taste like salty fish with a tapioca, gelatinous consistency. I've been told that top notch quality caviar is not suppose to taste like fish. I must have tasted the cheap kind of caviar.
