Chemists speculate that the primary cause for the reaction fizzes down to something called nucleation sites. If you have a liquid that is pumped full of a gas, as Diet Coke is pumped full of carbon dioxide, a nucleation site is a place where bubbles can form. Nucleation sites can be found on anything with a lot of tiny nooks and crannies, or anywhere you have a large amount of surface area in a small volume. Though Mentos appear to be smooth, they are actually incredibly pocked with microscopic bumps and scratches - perfect places for bubbles to form. So, for instance if a Mentos Mint has 1,000,000 microscopic bumps on it's surface, when Diet Coke is added to the equation, say 1,000 bubbles form in every possible nook and cranny, you get a Coke-load of bubbles in a hurry. Mentos are particularly good for this experiment because of their weight. This allows them to sink to the bottom rapidly reacting with every inch of the Diet Coke creating billions and billions of new bubbles all the way down.
