I read somewhere that California Maki is not an authentic Japanese maki. I'm not sure, perhaps this is an american adaptation. Maki means roll, so the "inato" recipe I gave you is indeed a maki recipe (ang sushi kay kanang naay rice gihapon pero topped by raw fish, crab meat, etc.). California maki contains crab meat, avocado, and cucumber, and is an "inside-out" maki, meaning ang rice naa sa gawas inig roll. Then the rice is rolled on sesame seeds or fish roe.
