My mom made me a huge batch of this when I was working in Makati:
ground pork
finely diced potatoes and carrots (as fillers)
season to taste
Day1: fry ground pork and vegetables. Add raisins to make fried giniling.
Day2: mix with egg and flour to make meatballs
Day3: again mix with egg and flour, add cheese, to make omellette or torta
Day4: Top the meat mixture with cheese and serve on top of rice to make cheese con carne ala pobre.

Day5. Add finely cubed cheese to the mixture before heating to make lumpia mixture. Use blanched fresh lettuce as the lumpia wrapper.
Day6. Fry the mixture. Add toyo, raisins, egg strips, cheese, remaining lettuce fried to rice. Voila, fried rice espesyal.
That is how I survived on a shoestring budget in Makati, saved all my savings, went back to Cebu and made a downpayment on my house. =)
