You learn how to react instinctively in an emergency situation. (braking, spin out, understeering, etc.)
You learn the limits of your car.
You learn the finer details of controlling your car.
You have an outlet to vent out your pent up "energy" ... racing at sanctioned events is as safe as you can get.

It's just plain FUN to do so :P

Car racing is a sport that combines aggression and precision. This is what makes the sport so challenging and fascinating.

During a race a drivers heart rate is way up there beating at over 160bpm, travelling at speeds that the human body was not designed by nature to do. At these speeds the driver must be aware of every single thing going around him such as the road surface, rpms and other parameters of his engine, all the noises in his car, where his opponent is and many other things. In the course of a race the driver is required to make correct split second decisions, such as where to brake, when to shift, where to pass, what gear to use, among other things. Thus, a driver has to be very physically fit to be able to multi task at hi speeds. Michael Schumacher during his glory days was the fittest driver on the formula one grid, he had a resting heart rate of 40bpm which really is incredible.

Another requirement in racing, in order to be successful is the equipment, you have to have a properly tuned and set up car for the particular kind of race you are joining and have the correct technology for that particular race. This technology, tuning and car setup is a big if not the major factor in what fascinates us into being motorsport fans.

In short racing is about physical and mental fitness coupled with science and technology.
