And for future-proofing if your mobo got 4 memory slots and you want to reserve the extra two for future upgrades in case the need for more ram arises. Also in overclocking, four sticks can lead to unexpected instabilities so most prefer two.
In real time usage scenario slow performance resulting from having insufficient ram is miles noticeable than comparing low frequency from high frequency ram.
