    BOWTIE PASTA WITH BEEF, CARROTS AND CHERRY TOMATOES IN BOLONARA SAUCE

    We had extra stuff in our refrigerator today, and after church, we wanted to do a pasta dish with my wife, what better way to make pasta than using extra stuff.

    Ingredients: Bacon (chopped),; onions (diced), garlic( diced), carrots (diced), bowtie pasta, cherry tomatoes, dried basil, dired oregano, garlic powder, roasted garlic powder, salt and pepper, tabasco, table cream, tomato sauce and ground beef.

    Marinate beef with salt, pepper, garlic powder, roasted garlic powder, dried basil and dried oregano (i would add a little mustard if i had any). Cook your pasta in boiling water (which usually takes about 9 minutes), boil your carrots till soft. In a wok, or saute pan, saute your bacon, garlic, onions for a minute or two till garlic turns a little bit brown then add cherry tomatoes and carrots and saute for another 2 minutes. Add your beef and cook. Add cream and tomato sauce and and refresh your spices (i.e.: salt, pepper, garlic powder, dried basil and oregano, roasted garlic powder) to taste. Allow the sauce to reduce a little bit.



    BASA FISH IN LEMON SAUCE:
    So my wife wanted to eat fish and after hearing our friend Dr. Victor Lagman and his wife Ethel told us about how great Basa fish is and how delicate the texture of the meat, I decided to buy one which after further reading up on it, discovered that it comes from the Mekong River and is sort of like a catfish called Pangasius bocourti, which has also been raised in the Philippines recently for commercial export. I originally asked the recipe from Ethel, who generously shared it. Thanks guys for introducing us to this wonderful fish.

    Marinate the fish in salt, pepper, knorr seasoning, dried basil leaves

    Sauce (do first)
    Saute onions, garlic, ginger, sliced lemons in butter and oil, till onion turns golden brown. Add tabasco sauce, lemon chicken sauce (from a pack), lemon juice, a tbsp of oyster sauce, basil leaves and season with salt and pepper. Allow to simmer and reduce a little.

    Then pan fry the fish in oil on both sides. (should coat the fish in flour of course, which i dint do coz well, I decided to skip that part). Empty the oil, then add the sautee sauce to the pan where you fried the fish and allow to simmer for 2 minutes. Serve wth chopped or sliced onion leaves on a biased or cilantro leaves (which i did not put here since i did not have on stock)
