HOUSE SPECIALTIES
Pochero
(BEEF SHANK IN ONION SOUP)
Beef shank with bone marrow simmered (as) soup with corn cobs, bamboo shoots, taro and cabbage. Special herbs and spices are added in order to savor the broth, garnished with onion leeks.
Tinolang Manok Bisaya
(NATIVE CHICKEN BROTH)
Native chicken cuts simmered and cooked with lemongrass, ginger, onions and native pechay to enhance the taste.
Kalderetang Kanding
(GOAT'S MEAT STEW)
A favorite at town fiestas. Long, slow simmering makes the goat’s meat tender while the potatoes, carrots and special herbs add the richness to the taste.
Balbacua
(BEEF KNUCKLES IN GINGER SOUP)
Beef knuckles simmered and boiled into a thick broth with ginger, mixed with annato (”asuete”) seed extract to have a distinctive color and aroma.
