Depends on how it was prepared.
I have taught our helper how to do it right. And she has done it very well. Kinaham ang iyang kilaw nga guso. The secret is in the preparation. Sakto sa sagol especially sa suka and panakot. To prevent rubbery guso is to boil it just enough. If it is overboiled, it becomes laway laway. If kulang, parang rubber band. The lamas, panakot, vinegar comes later and adjusted to taste. (Blanching is a no no.)
