for what i know, i think mas correct if you'd say 'the yolk of eggs is white', kay you're not talking man about the egg, you're talking about they yolk...and since liquid form ang yolk, you don't say 'yolks' regardless of it's volume, much like you'd say...'the water is cool'...you don't say 'the waters are cool'
