    Next topic would be PERSONAL HYGEINE , as a kitchen worker :

    - females should have hair nets
    - males should have ball caps
    - fingersnails should always be trimmed
    - always take a shower before reporting to work
    - wear a clean uniform
    - dont come in to work if you are sick ie * DIARRHEA , FLU , FEVER etc
    - always wash hands AFTER you use the bathroom , smoke , scratch your face , ears , nose etc

    F.B.I= Foodborne Illness

    A foodborne illness or food poisoning is any illness resulting from the consumption of food contaminated with pathogenic bacteria, toxins, viruses, prions or parasites. Good hygiene practices before, during, and after food preparation can reduce the chances of contracting an illness.     akong sister naa sad siya own way of avoiding contamination.....gi designate niya iya left hand as her "clean" hand...so as much as possible she does not touch her face with her right hand...same way she tries not to use her left hand to open doors...grab railings etc

    slightly off topic ni...kay di man jud ni applicable about food preparation...pero helpful avoiding flu etc....

    Another food safety I can think of na very BASIC :

    - kung CANNED FOOD lovers mo , avoid any dented cans because chances are infected na siya ug BOTULISM . BOTULISM is :

    - avoid eating RAW foods because it is the cause of the FBI we call SALMONELLA . SALMONELLA is :

    Raw foods that needs to be avoided includes and specially poultry items :

    1. SUNNY SIDE EGGS
    2. RARE/MEDIUM RARE/BLUED GRILLED MEATS

    ..naa pa diay ko lain simple tip...before opening canned goods make sure you wash it usa....kay dugay na na store sa shelves or warehouses...ngee...usahay naa mga ok-ok or daga sa mga bodega....naa daw instances ma ihian ang mga lata...so contaminated ang surface...so kon abli ra ka diretso ...ma adto sa content.....

    also i read somewhere..as soon as you open canned goods...i-transfer ug lain sudlanan...kon dili nimo gamiton ang tanan sulod sa can...i-store siya on a separate container not on the can itself...na limot ko sa reason oi...basin si springfield maka explain why...

    @ GWYNN ... hehehe basin maka explain lolz .. murag sayantis man ta ani nuon . Its because of the toxins na siya na mo CHEMICAL REAC kay na expose na ang food then the same time na expose pod siya sa metal container or can . I will research sa specific name ana na toxin kay nalimot ko sa ngalan .

    Another tip na very basic but most likely para gyud ni siya sa mga commercial establishments pero who knows we do have restaurant owners here and it will help a lot kung di gani mga istoryans na naay dagko na ref sa balay . The precedence of the foods that I will mention kay starting na siya sa taas padong ubos and imagina siya na naa sa usa ka shelf to avod CROSS CONTAMINATION .

    COOKED MEATS
    COOKED SEAFOOD
    COOKED POULTRY
    RAW MEAT
    RAW SEAFOOD
    RAW POULTRY

    Knunay gyud i ipa ubos or ipalayo ang POULTRY sa MEAT kay grabe kaau na siya ug cross contamination and multiplication sa bacteria .

    na kami...gamay na gani ang ref....ang nanay ko tawn one time nag-DEFROST ug chicken sa second shelf tapos WALA pa gyud plate underneath it...ay nagwawala ako sa kusina sige ako yawyaw. hahahahaha.

    paano kc nung panahon nila (til now) ignorante man ang kadamihan sa ila generation about bacteria and cross-contamination.

    sabi ko...LAHAT ng defrosting kung dili natin gagawin sa microwave...eh dapat sa pinaka-ubos nga shelf tapos dapat in a container. hahayyyy.
