    When the ECQ just started there were jokes that two things will happen when we come out of the ECQ, either we become new chefs or we have learned a new hobby. Nearly two months being locked inside our homes, cooking new recipes and dishes, eating and sharing them with the family has made the lockdown bearable.

    The Istorya team would like to share to you recipes that our families love. We hope your family will love it too as much as we do.

    This recipe is Mrsbeor’s Adobo recipe, it's her family's comfort food.

    1. Pork adobo cut
    2. Aromatics: garlic, onion, rosemary, tarragon, thyme, cumin, oregano, bay leaf, peppercorns, ginger, turmeric
    3. Seasonings: salt, pepper, dark soy sauce, vinegar, anchovy extract/patis
    4. Chopped potato
    5. Water

    1. Store bought meat (adobo) cut comes in very big pieces, cut it into bite-sized pieces.
    2. Season the pork with salt and pepper.
    3. Sauté the onion until a bit transparent. Add the garlic. Sauté.
    4. Add the pork, sauté until brown.
    5. Measure 2:1 ratio for vinegar and soy sauce. For this recipe, I used 1/2 cup vinegar to 1/4 cup soy sauce. I always like to mix vinegars when cooking adobo. Each kind of vinegar brings about its own sourness and flavor. @datuputiph @heinz @bragglivefoodproducts
    6. Pour the vinegar and soy sauce mixture into the pan. Add 1 cup of water or pork broth.
    7. Add the rest of the ingredients - chopped potatoes, ginger, turmeric, bay leaf, and peppercorns.
    8. A pinch each for rosemary, tarragon, and thyme.

    12. Cook on low heat for 30 minutes.
