To celebrate this occasion, Chef Wong presents his debut collaboration for the restaurant: a curated menu featuring signature dishes that highlight the flavors of Hong Kong, alongside a new Lunar New Year menu that blends tradition with a modern twist. A New Culinary Star at Mott 32
Mott 32 is thrilled to introduce Chung Tin Eddy Wong as its new Head Chef. With over 40 years of culinary experience, Chef Wong brings a wealth of knowledge in crafting exceptional dishes and managing kitchen operations. His extensive career includes serving as an Executive Chef at renowned establishments, where he gained a reputation for elevating Chinese cuisine through a harmonious blend of tradition and creativity.
From January 21 to March 21, 2025, Chef Wong will showcase a signature menu featuring Mott 32 favorites, including the Shredded 42 Days Peking Duck Salad, Barbecue Pluma Iberico Pork, and Braised Abalone. Each dish will exemplify his mastery of flavor, technique, and presentation. Under his leadership, Mott 32 continues to set the standard for luxury dining in Cebu.
Lunar New Year Special Menu
In celebration of the Lunar New Year and the Year of the Wood Snake, Mott 32 will unveil a specially crafted menu curated by renowned Group Executive Chef Lee Man Sing, along with Co-Founders Xuan Mu and Malcolm Wood. This new menu, available from January 28 to February 12, combines the rich culinary heritage of Chinese cuisine, featuring a selection of dishes that embody the spirit of festivity and togetherness.
A highlight of the season will be the Lobster and Abalone Lo Hei Salad, a must-have for the Lunar New Year. This signature dish, symbolizing abundance and good fortune, features shredded radishes in vivid colors, crispy taro, and tender pieces of lobster and abalone. Diners can toss the ingredients together while sharing auspicious wishes, allowing the dish's harmonious blend of freshness and umami to set the tone for a prosperous year ahead.
To celebrate the Lunar New Year in style, Mott 32 will present a stunning new dish – Stir-Fried Lobster with Rainbow Quinoa. This visually appealing creation not only delights the palate but also adds a nutritious twist that enhances the natural sweetness of the lobster.
Seafood enthusiasts will also enjoy the Wok-Fried Tiger Prawn with Chinese Cabbage, featuring fresh tiger prawns sautéed to perfection and complemented by the crunch of cabbage in a rich shrimp soup.
Alternatively, the Braised Yellow Croaker Fish with Shanghainese Rice Cake offers a rich and hearty experience, where delicate fish and chewy rice cakes create a perfect bite.
Another standout option is the Wok-Fried Golden Oyster and Prawn Cracker, a dish that delivers an explosion of textures and flavors. It includes diced golden oysters, Chinese preserved meat, water chestnuts, and sweet beans served atop delicate, deep-fried prawn crackers that crackle with each bite. Additionally, the Roasted French Lamb Belly with Pepper features tender lamb infused with an aromatic blend of peppercorns, presenting a crispy exterior that gives way to succulent meat.
To complete the meal, the Stuffed Crispy Chicken with Abalone, Fish Maw, Glutinous Rice, and Chinese Preserved Meat showcases the chef's expertise. The chicken is deboned and roasted to golden perfection, enveloping a flavorful medley of ingredients that exemplify Mott 32's culinary philosophy.
