Pino

Wife and I were invited to take part of the Pampanga Food Festival at Pino with guest Chefs from Manila. It was a definite treat to dig into the buffet. My personal favorites were the buro sashimi (fermented rice, steamed shrimps, fried fish wrapped in romaine lettuce), adobong bibe (duck adobo), lengua and of course the Sisig.

What also made the trip worth was the conversation with Guest Chefs Edith and Chef Sau who are Pampangeņos by heritage. The Sisig, as Chef Sau would reveal, was from the original version given a little continental twist. In fact, it was supposed to have faux gras but was later changed due to pricing considerations.

The Buro Sashimi, was a pleasant surprise. I've always hated buro or fermented rice. But this was staple among northern tagalogs, it was like their version of the bagoong but only more sour and nastier. However, with Chef Edith's take, the strong pungent smell was not present nor was the sour taste that usually came along with the buro. Wrapped with the shrimps and fried fish, it presented itself pleasantly to taste buds.

The service was fast, despite the fact that the restaurant was full. Some of the sous chefs were even helping the customers put together a good suman latik combination with a good, hand-beaten, thick, Hot Choco.

Rating: 5/5
