that's right. Granny Smiths are the best for making apple pie. they don't become too soft after baking.

preparation:

i divide the meat that i buy according to the serving portions that i allocate for each meal time. for example my 1 kilo of pork chop is equivalent to 4 ka luto-an, so i put each portion into different containers. para inig oras na sa ting luto, i only get what is needed.

chicken - i buy whole chicken and slice and divide it. wings, neck and other bony parts, allocated for soup dishes. thighs, drumstick - for fried chicken or adobo. for the breast/rib keel - pan sahog or cordon bleu or chicken fillet.

how about you guys?

@ galadriel: i like to prepare in a similar fashion too. dividing the food into different portions just enough to feed all at home depending on what meal can definitely save time.

culinary schools? hmm... i think that it doesn't matter too much what school you attend but a schools reputation will also help in your application for a job. that said, i would prefer to really excel i the subjects i'm taking to make a really good impression no matter what school i'm in. i hear that there is one in banilad or was it banawa (?) but i can't recall the name.
